Peanut Brittle with bacon

Bacon seems to be everywhere these days. Sought after and savored, everyone is trying to work it into new creations and tasty treats. Chocolate bacon has been done and all the rage so I wanted to try something more innovative and work it into my peanut brittle.

You start with the microwave peanut brittle recipe http://bit.ly/e8MQ0B and at the last step add 1 cup of crisp crumbled bacon just before you add the baking soda.

The result, although denser than a regular peanut brittle was a little spectacular. I guess everything really is better with bacon!

    So, I’m going to try this recipe and bring to the cookie swap. But I’m thinking a maple with almonds or pecans. Or a butter/rum if I can figure out the substitutions. May need your help on that, as I’ve never made brittle in my life. 🙂

      If you have a regular microwave try cooking times 1 min 4 min 2 min and it should come out perfectly. Recommend trying a plain batch first with nuts you could ude rum extract instead of the vanilla to make sure it sets and get the hang of it. I haven’t tried with any kind of alcohol and not sure about setting or what the chemical reaction with the baking soda would bein a molten mixture with it.
