Cherry Almond Clafouti

The cherries are here! The cherries are here! Fantastic right out of the bowl cherries are one of my favorite fruits and each year I can hardly wait until local cherry season. They are so versatile in both savory and sweet dishes. They can be made into gorgeous rich sauces with port to top your duck, made into sweet luxurious sauces to top your ice cream, granitas, pies, cakes….the possibilities are really quite endless. This particular day I had clafouti on my mind. Clafouti is the name of my favorite french patisserie which was named after the classic french rustic cake which is similar in texture to a pancake but is far more rich, moist, and dense. I had never made one before thought it would be a nice way to showcase this weeks cherries.

Mmmm cherries!

Cherry Almond Clafouti

Cherry Almond Clafouti

1.2 cup whole almonds
1 1/4 cups whipping cream
1/2 cup brown sugar
pinch of salt
1/4 cup flour
3 eggs at room temperature
1 TBSP lemon extract
2 Cups fresh cherries
Mint to garnish

Prepare cherries by pitting them and cutting them in half
Butter a pie dish (glass if you have one so you can see the pretty cherries on the bottom)
Working in circles from the outside in lay cherries in dish until the bottom of the pan is completely covered.

In a food processor grind the almonds
In a medium sauce pan over simmer milk and almonds and let steep 30 minutes
Strain almond milk mixture pressing hard on the solids and discard almonds

In a mixer beat the eggs with the sugar
Add the lemon extract and salt
Add almond milk and mix
Add flour and mix again until completely incorporated and the mixture is smooth

Pour mixture over cherries and place pie dish in oven

Bake at 375 for approximately 30 minutes until edges are golden and mixture is set. You can test this inserting your knife or a tooth pick into the center it should come out clean.

To plate cut into slices and garnish with mint. You can dust powdered sugar on the top but it was so pretty that I wanted the cherries to stand out

    Good dish for the gluten intolerant! Looks delish! Cherries in my house don’t make it very far, they go straight in my mouth.

    • Thanks! It was very good. I love cherries and they don’t last long around here as well. I just bought a whole bunch more today at the farmers market and I am making a sour cherry and marscapone phyllo tart and a sweet cherry granita. Hope you had a lovely weekend!
